Quarantine yourself with this quiche and a side of records and wine.

You might remember the oh-so-cool Claire-Marie when she went live on our IG a few weeks ago and pumped some much needed disco tunes into our homes on a Saturday night. Well, she's back -- but this time with cream! In the form of a Quiche Lorraine. So pour the wine, crank up the tunes and enjoy some time in the kitchen.

Q: Tell us a bit about your quarantine life. Where are you? Who are you quarantined with? How much do you want to shake them on a daily basis? Or are you a zen master?

Claire-Marie: My husband and I have been in our getaway house in Upstate New York -- Hudson, specifically -- for more than a month now. We invited two close friends to stay with us during this time as the house is big enough and solidarity comes first right now. Can I say 50%, 50%?! Like everyone, there are good days and harder ones. The weather plays a lot with my mood and energy. Sometimes on rainy days I wish to be alone, so I stay in my bedroom or run outside in the morning. Sunny days I am the opposite. We are all learning everyday how to live, share the space, and communicate together. It’s actually quite interesting.

Q: What is a small or big thing you're doing every day to help you stay sane during quarantine?

Claire-Marie: Meditate.

Q: Have you and your quarantine mates agreed on what type of music should be played in the house?

Claire-Marie: I hate saying it, but nobody's brought up the subject as I always play music all day -- friends here or not. In the morning and during the day, it’s very relaxing, calm, cozy vibes. The mood changes after 6:00pm when everyone is done working and starts pouring a glass of wine or cooking. During dinner, I love playing records. Mostly albums so I don’t have to get up every 10 minutes to flip the disk!

Q: What is the song (or songs) most listened to since quarantine started?

Claire-Marie: Albatross by Fleetwood Mac, Immortality by Ana Roxanne, I Love You by The Bees and Green Arrow by Yo La Tengo.

Q: What is the food you've consumed the most since quarantine started?

Claire-Marie: Can we consider red wine a food?!

Q: Place you want to travel to first when all bans are lifted?

Claire-Marie: Paris to visit my family.

Q: And, finally, what's the best party you've ever been to?

Claire-Marie: Way too many to respond with precision! Oops...

Claire-Marie's Famous Quiche Lorraine:

Ingredients:

  • 1 pie crust
  • 200g of pancetta or lardons - if you can’t find it, you can replace with slow cooked ham as I did
  • 80g of Comté or Gruyere
  • 4 eggs or 6 eggs - depends how big your pie dish is
  • 40cl of crème fraiche - I usually do half cream, half whole milk so it’s less heavy. Thanks Mom for the tip!
  • A pinch of nutmeg
  • Salt
  • Pepper

Directions:

Turn your oven to 210 degrees Celsius (365 in Fahrenheit).

Roll out the pie and pierce with a fork.

Pre-cook for 5 to 7 min.

Mix all the ingredients together: cream, eggs, ham, cheese, etc. If you have lardons, pre-cook them in a pan before.

Add everything into the pie crust.

Put in the oven for 40 to 50 min et voilà!
